Our menu will vary depending on seasonal conditions and availability.

Traditional American Style Breakfast
Fresh Fruit with mango, bananas, papaya and watermelon
Cheese and Avocado Omelette with fresh fruit and home fries
Pancakes with maple or blueberry syrup
Granola with yogurt and fresh fruit

Lunch
Bolivian Sweet Corn Tamales with a peach mole
Watercress, Orange, and Avocado Salad with a toasted coriander dressing
Romain Hearts with chile strips, plantain croutons, and cabrales blue cheese dressing
Pollo Delicado Marinated and grilled chicken on moros with a cilantro sauce and pickled tomatoes
Paella a la Valenciana with mussels, clams, calamari, chorizo, and chicken in saffron-scented Spanish rice
Jack Veracruzana in a white wine broth with onions, jalepenos, olives, tomatoes, and potaoes
Brazilian Moqueca Fish, shrimp, mussels, and cockles in lime-scented coconut broth with coconut rice

Dinner
Arugula and Celery Root Salad with shaved manchego, pepitas and lemon dressing
Seared Calamari with white beans, peppers, and Bilbao chorizo
Peruvian Ceviche Seabass marinated in lime juice, ginger, and Aji Amarillo
Crisp-fried Zucchini Flowers with goat cheese and eggplant pico de gallo and valentin tomato salsa
Seared Florida Grouper on a creamy organic succotash of calico corn, fresh pimento, asparagus, and lima beans
Tamarind Glazed Salmon on cumin-scented cabbage and mashed yucca, with an orange and scotch bonnet mojo
Posole Rojo Traditional Mexican vegetable and hominy stew in tomato ancho and guajillo chile broth
Latin Vegatable Fiesta Seasonal vegetables, including black beans, sauteed plantains, and arroz con chicharros
Carnitas Slow cooked pork on mashed yucca, black beans, plantains, and salsa fresca
Peruvian Marinated Skirt Steak with aji rocoto, refried white beans, and watercress salad

Beverages include juices, bottled water, soft drinks, wine and full cocktail service.
